Bacon Wrapped Carrots
Ingredients
8 carrots
8 slices of bacon
2 Tablespoons maple syrup
Instructions
Preheat oven to 400ºF.
Prepare a rimmed baking sheet with a wire rack. You’ll want to bake anything that’s wrapped suspended on a rack above parchment or foil, so the bottom of the food doesn’t get soggy and your pan doesn’t get ruined.
Rinse and scrub each carrot, removing any blemish or brown spots with a small knife. Trim the tapered ends.
Wrap each bacon strip tightly around each carrot, only slightly overlapping the bacon ends as you spiral up. You may use a wooden toothpick to secure the bacon at the ends but these may burn in the oven.
Bake on the top rack of the oven for 15 minutes.
Using tongs, flip the bundles and bake for 15 more minutes.
Remove the carrots from the oven and brush with maple syrup, covering the outside of the bacon and carrots evenly.
Return the tray to the oven and bake the carrots for 5 more minutes, allowing the maple syrup to soak in.
Remove from oven and allow to cool directly on the wire rack or on a bare plate before enjoying.
