Bacon Wrapped Asparagus
Asparagus is one of those foods that divides us. Some people love it, and for others it both tastes gross and makes their pee smell funny. But the Cooking With Heat crew is already a big fan of asparagus! Even before wrapping it in bacon!
Bacon Wrapped Asparagus
Ingredients
16 stalks of asparagus
8 slices of bacon, (not thick cut!)
Black pepper (optional)
Instructions
Preheat the oven to 400ºF.
Prepare a rimmed baking sheet with a wire rack. You’ll want to bake anything that’s wrapped suspended on a rack above parchment or foil, so the bottom of the food doesn’t get soggy and your pan doesn’t get ruined.
Trim the woody ends of the asparagus. This is generally the bottom 10-20% of the stalk.
Wrap each bacon strip tightly around 2 sprigs of asparagus, only slightly overlapping the bacon ends as you spiral up. You may use a wooden toothpick to secure the bacon at the ends but these may burn in the oven.
Bake on the top rack for 10 minutes.
Using tongs, flip the bundles and bake for 10 more minutes.
If the bacon isn’t crispy, set your oven to broil and place the tray under the broiler for 1-2 more minutes to crisp up the outside of the bundles.
Remove from oven and transfer bundles to a plate lined with paper towels to absorb excess bacon fat. Add a dash of black pepper and enjoy!
