Brown Butter Banana Cookies
Ingredients:
1 ripe banana, mashed
1/2 cup brown sugar
1/4 cup melted brown butter (yes, take the extra step—it’s worth it!)
1 cup flour (or GF 1:1 replacement)
1/4 tsp baking soda
1/4 tsp salt
1/4 cup chocolate chips (swap for peanut butter chips if that’s your vibe!)
Instructions:
Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a mixing bowl, mash the banana until smooth.
Stir in the brown sugar and melted brown butter until creamy and well-blended.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually fold this into the wet mixture until just combined. (Don’t overmix!)
Drop spoonfuls of dough onto the baking sheet, leaving space between each.
Bake for 8-10 minutes, until the edges turn golden but the centers stay soft.
