Don't Starve Honey Nuggets
In the spirit of FOODuary, we're taking a culinary leap straight out of the survival world of Don't Starve into our cozy, real-life kitchens with a familiar dish that you won’t need to risk any bee stings for – Honey Nuggets. But not just any Honey Nuggets; these are a vegetarian twist on the game's classic, using our very own, meticulously crafted "CHIK'N" seitan.
This recipe is a love letter to all things gaming and gastronomy, inspired by the crunchy, sweet, and decidedly edible elements of Don't Starve's iconic dish. It's a testament to the fact that with the right ingredients (any meat + honey) and a pinch of having-the-right-color-plate-already, you can bring even the most fantastical foods to life.

Bob's Red Mill Vital Wheat Gluten Flour, 20 Oz
joystikNik’s favorite Seitan CHICK’N recipe
Ingredients:
Seitan
2 cups vital wheat gluten
1/2 cup nutritional yeast
2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1 tbsp parsley
1 1/2 cup vegetable broth
2 tbsp soy sauce
Broth Mixture
4 cups vegetable broth
2 cups water
Instructions:
In a mixing bowl, whisk the vital wheat gluten, nutritional yeast, and spices.
Add the veggie broth and soy sauce and mix until combined. Knead for 5-7 minutes.
Bring the broth ingredients to a boil in a large, tall saucepan.
Break off small pieces of the seitan and place them in the broth (if you need to, add more water to cover them). These will double in size.
Bring the mixture to a simmer and cook for ~30 mins, flipping each piece halfway through.
Honey Nuggets
Ingredients:

The “chik’n” from the first recipe, OR 1 pound skinless, boneless chicken breasts, cut into 1 inch cubes
1/3 cup honey
1 cup bread crumbs
1/2 tsp. salt
1/2 tsp. ground black pepper
1 tsp. garlic powder
1 tsp. garlic salt
1 egg
The Best Honey Mustard to Ever Exist
1/2 cup kewpie mayonnaise
2 tablespoons yellow mustard
2 tablespoon Dijon mustard
3 tablespoons honey
1 tablespoon lemon juice
2 tbsp. fresh parsley, chopped
Instructions:
Preheat oven to 400 degrees F (200 degrees C). Grease an 11x7 inch baking dish or several baking pans lined with parchment paper.
Combine bread crumbs, salt, black pepper, garlic powder, and garlic salt in a bowl.
Beat egg and honey in another bowl. Toss CHICK’N in egg mixture, then press CHICK’N into bread crumb mixture. Transfer to prepared baking dish.
Bake in preheated oven until for about 12 to 15 minutes. Serve with honey mustard.
