Pickled Watermelon Rind
The Cooking With Heat staff is often accused of having the mentality of 'using every part of the buffalo'. This recipe set is a very good example of this. When you've munched all the watermelon and all you have left is the white edges, you can still make another tasty treat!
We've got two different ways to pickle your watermelon leftovers, and they're both sweet and crisp and very delicious.
Ingredients
- Rind from a watermelon
- 1 cup apple cider vinegar
- 1 cup water
- 1/2 cup honey
- 1/4 cup crystallized ginger
- 4 tsp kosher salt
- 1 tsp red pepper flake
- 1 tsp allspice berries
- 1 star anise pod
Instructions
- Pare the rind and cut into fun sized pieces
- Bring everything else to a boil for 1 minute
- Add rind
- Bring back to boil, then turn off heat.
- Let stand 30 minutes. Cover, let stand another 90 minutes. Refrigerate overnight.
Ingredients

- 3 cinnamon sticks
- 1/2 tsp whole cloves
- 1/2 tsp whole allspice
- 1 dried key lime
Instructions
- Pare the rind and cut into fun sized pieces
- Bring everything else to a boil for 1 minute
- Add rind
- Bring back to boil, then turn off heat.
- Let stand 30 minutes. Cover, let stand another 90 minutes. Refrigerate overnight.
